There are only a few types of finishes that can stand up to the constant abuse that the hospitality industry dishes out every day.  Quick hint, if your contractor is going down to Home Depot to get you a table top finish to solve your problem, they are only recreating it or worse, exacerbating the issue.  Here are a few finishes that you can count on to go the distance!

  • UV Cured Urethane. This type of finish for table tops is the best on the market when applied in the factory to table tops. UV finishes are 100% solid, meaning that they have zero VOC's and don't have any harsh chemicals or vapors involved. They are cured with UV light in the 385 nm spectrum and are ready to pack and ship mere seconds after the light is applied to the finish.  It is indeed a miracle of science to watch this happen in real life!  In addition to this quick curing method, UV Finishes are as durable and tough as epoxy, without the thick look and feel. At WD, we have partnered with EcoLab to test a variety of front-of-house cleaners they provide to the hospitality industry, against our finish to make sure it is up to the task of the most demanding applications. Here is a list of products tested against our finishes- Oasis 146 quat sanitizer, Peroxide multi surface cleaner, Tabasco, 90% alcohol, Citrus, wine, grease, katchup, mustard, vinegar, coffee soy sauce, mayo, maple syrup, strawberry jam, cream, BBQ sauce, Coke and some other items just to prove its durability like Sharpie, sweaty water glasses, hot plates, and even nail polish remover. 
  • Conversion Varnish. In my opinion this finish is tied with an ICA finish, the only distinguishing difference being the VOC's. Conversion Varnish is a 2 part finish that includes the base finish and a hardener to accelerate the cure and make it rock hard in a matter of hours. This type of finish is not recommended to be applied on site, but in a factory because of the VOC's.  This finish is best sprayed on the table tops in a finish booth  where the emissions can be safely captured and vented.  While this finish may not be the most environmentally friendly, it is a very durable finish that many professional table makers use.
  • ICA Acrylic Finishes. This new breed of finish was developed in Italy and has an acrylic base that is also cured using a 2 part system, like the conversion varnish. This system, however is much more friendly to the environment emitting less VOC's than traditional conversion varnish. ICA finishes are renowned for their durability and ease of application.

Regularly scheduled deep cleaning sessions can help remove built-up residues that daily cleaning might miss. Additionally, implementing a checklist for staff to ensure that each table is thoroughly cleaned before and after each service can help maintain a consistently pleasant dining environment.

Hint, most people don't know that only using quat sanitizer (the red bucket in every restaurant) will eventually lead to a sticky build-up on your table tops. More on this below..

  3. Be sure to dry the table after wiping down. This is a critical aspect that helps prevent the build up of Quat residue. Plus no one wants to sit down at a freshly wet table. It is just gross.
  4. Incorporate the use of EcoLab Peroxide multi surface cleaner at least once a day. A lot of owner operators instruct their staff to do this as the last wipe down of the evening. The peroxide cleaner helps remove any quat residue left over from the days wiping down. Now you know the way the "big guys" do table maintenance.

If you tables are already sticky and you are looking for an immediate solution, start with wiping down the tables with only the Peroxide solution for a week. The stickiness wont be solved after just one application. Afterall, the buildup needs to be gradually removed and it will take a few applications. If after this process, your tables are still sticky, it may be time to try some drastic options like alcohol or even something harsher. I would suggest trying a very small spot in an inconspicuous area first before applying to all of your tops. If after that, you still have issues, it will be time to get new tables or invest in expensive refinishing.
